Avocado Cream Dip
This was actually an accidental recipe. I was formulating an avocado based pasta sauce and in my creation process I ended up with this nice, thick, dip like consistency. I tried it on some veggies with and Wow! I knew this was going to be a new must have on our weekly meal plan.

As you can see in the ingredients I used another base recipe to create this one. You can find the Cashew Cream recipe over here. If you are unable to make the cashew cream you can double the avocado or use something in its place with a thick cream like consistency.
Ingredients
1 large ripe Avocado
Juice of 1 Lemon
6 tbsp Cashew Cream
8-10 tbsp Water
2 tbsp Black Pepper
1 tbsp minced Garlic
2 tbsp Avocado Oil
Have extra ingredients on hand to customize
Directions
1. Put half of ingredients in blender, mix till fully incorporated
2. Check consistency, add remaining ingredients then blend again
3. Check taste, consistency and customize
4. Add more cashew cream or avocado to thicken, to thin out add single tbsps of water till you reach desired consistency
Depending on use, makes 6-8 servings
Will keep in refrigerator 1-2 days, best consumed immediately

Sarah’s Tips
If you aren’t in love with a lemony flavor you can reduce how much lemon juice you use and add additional salt and pepper, however lemon is a helpful preservative and will keep the avocado from browning
Once you have put this dip together you can use it as a base for dressing or a pasta sauce
