MandoBerry Recipe

I had seen a lot of Star Wars themed treats but many of them required a lot of different ingredients, took time to make and while I am creative, when it comes to being artsy with food, I am not that person. I wanted to create something for my fellow “want to make something fun, tasty, star wars themed but don’t want to have to be picasso“. I ended up with an entire booklet of smoothie recipes, that didn’t even include all of my creations, so maybe there will be a second edition one day.

MandoBerry Smoothie Recipe

Ingredients

1 cup Coconut Milk

1 cup frozen or fresh mixed Berries

3 tbsp shredded Coconut

Handful of Ice

Whipped Cream topping

Directions

Blend everything together

Garnish with leftover berries if desired

Top with cream if you like

Makes 2 servings

Best consumed immediately

Sarah’s Tips

To achieve the color in the photo I used strawberries, raspberries, blueberries and blackberries. Blackberries and Blueberries alone will give you a purplish color, Strawberries give a pink color and Raspberries give a slightly deep pink color.

For a thicker smoothie use frozen berries, If you aren’t concerned about thickness fresh berries will do.

Instead of shredded coconut, you can freeze canned coconut milk in ice trays, so you can get the same benefits but a smoother texture. You can also use coconut meat if you can get your hands on fresh coconut.



As with any recipe of mine, I encourage you to make it your own, experiment, adjust to your desired taste. Use this as a guide and develop a creation that YOU like best.
