While bread products are not common in my diet, this brioche was calling my name. I decided to make something seasonal & create an opportunity to have a special weekend brunch option, which fostered a different level of presence when I prepared it, when I shared it with my husband, an opportunity to channel love

Pumpkin French Toast Ingredients

Ingredients

Brioche/thick bread - we used gluten free

2 tbsp pumpkin puree - add more for stronger pumpkin flavor

2 eggs or 1/2 cup egg substitute

1-2 tsp cinnamon

1 tsp nutmeg

1 tbsp vanilla extract

1/4 cup plant based milk/half & half

1 tsp raw sugar

Maple syrup & butter to top with

Directions

1. Heat a large pan on low to medium, coat pan lightly with butter, olive oil, or avocado oil

2. Mix "eggs", pumpkin purée, cinnamon, "milk", vanilla extract. Stir till ingredients are full incorporated

3. Soak pieces of bread in mixture for 5-10 seconds then place in pan

4. Sprinkle a pinch of raw sugar & cinnamon over bread while cooking in pan

5. Cook well on both sides till slightly browned 5-7 min.

6. Top with butter & maple syrup if you want but I'm not sure if it really needs it!

Makes 6 pieces

Best consumed immediately but will keep 1-2 refrigerated in airtight container

Sarah’s Tips

If you really want to up the pumpkin flavor you can add more pumpkin puree and lessen the amount of milk by a quarter or you could also add about 1 tsp of Pumpkin Pie Spice
