It’s Not Chicken Salad

If you are looking for an alternative to traditional Chicken Salad, look no further. I have been making this several years now and have yet to run across someone who realized it wasn’t chicken!

“Chickpeas are pretty incredible! When cooked, cooled, rinsed, and mashed their consistency resembles that of shredded chicken.”

I like to use Cashew Cream in place of traditional mayonnaise, but whatever you have on hand will do. There are other alternatives as well that are delicious like a little mashed avocado, mustard , or even lemon juice if you prefer a less creamy consistency. Luckily there are many mayonnaise options out there these days that do not contain additives or preservatives that can affect your health adversely.

Ingredients

2 cups Chickpeas (rinsed and drained)

1/2 tbsp Black Pepper

1 tbsp Oregano

1 tbsp Dill

Pinch of Himalayan Sea Salt

1/2 Lemon

1 small Red Onion

1/2 cup Red Grapes

3-4 tbsp "Mayonnaise" alternative - Mashed avocado, Lemon juice, Avocado Mayo, Dijon Mustard, Cashew Cream

Directions

1. Place rinsed chickpeas in a large bowl, then mash

2. Add onion, seasoning, lemon juice and grapes, mix well

3. 1 tbsp at a time add your "mayo" then mix, adjust to your desired consistency

4. Taste and adjust with seasonings

5. Mix once more then serve

Makes 6-8 servings

Will keep in refrigerator up to a week

Dill - Stabilizes blood sugar, aids digestion


Sarah’s Tips

Traditional mayonnaise can contain certain ingredients that can contribute to health conditions, even if you are skeptical about alternatives, don’t be afraid to try something new.

I like red onions in this as red onions have amazing health benefits, but yellow will do if red is too strong of a taste for you.

Red Grapes offer that perfect balance of sweet but you could also use dried or fresh cranberries, both are delicious!


As with any recipe of mine, I encourage you to make it your own, experiment, adjust to your desired taste. Use this as a guide and develop a creation that YOU like best.
